For this festive Horchata recipe, we’re using hazelnuts instead of the commonly used almonds. They give this horchata a delicious flavor and are full of nutrients and benefits as well. They are particularly rich in fiber, making this a great drink for the Paleo diet since fiber is needed to help process the meat that you eat. Not only are you getting a good boost of fiber, but you’re also getting a serving of protein as well as essential minerals like magnesium and iron. This is a beautiful addition to our Cinco De Mayo Fish Tacos with Broccoli Slaw and Lime Cream Sauce and Paleo Spicy Mexican Cauliflower Rice.

Ingredients

    • 3 cups cold water
    • 6 oz raw hazelnuts
    • 1 cinnamon stick
    • ¼ tsp ground cinnamon (optional)
    • 4 tbsp raw honey
    • ice cubes

Directions

  1. Place the hazelnuts, water and cinnamon stick in a high power blender and blend until smooth. Let it sit for three hours.
  2. Strain through a fine sieve. Place the pulp in a fine cloth and squeeze well to extract all the juices. Save the pulp for late use in cookies or a cake. Mix the horchata with honey and pour over ice in a tall glass. Sprinkle with ground cinnamon if using and serve.
