Everyone needs a reliable vinaigrette recipe in their lineup. Use it as a salad dressing or drizzled over roasted veggies. This recipe is zesty, tangy, and oil-free and can easily be transformed into a creamy dressing like in the ranch dressing variation below.



  • 1/4 cup balsamic vinegar
  • 1/4 cup water
  • 1 tbsp dijon mustard
  • 1 tbsp Italian seasoning blend (salt-free)
  • 1/2 tsp garlic powder
  • Salt and pepper to taste


1. Combine all ingredients in a jar, and shake until combined

Variation Suggestion – Ranch Dressing:

  • Replace the balsamic vinegar with the juice of 1 lemon and 1 tbsp white wine vinegar
  • Replace the Italian seasoning with 2 tbsp each of fresh parsley and fresh chives
  • Add 1 lb. silken tofu
  • Add 1/2 tsp onion powder
  • Omit the dijon mustard
  • Add all ingredients to a blender of food processor and blend until smooth
