Chia seeds are an excellent source of Omega-3! You can add them to many recipes, including smoothies, puddings and salads. Here we’ve toasted them and sprinkled on zucchini–try it with another favorite green vegatable as well. Read our blog post here for more information on vegan sources for Omega-3

Prep Time: 5 minutes

Cook Time: 15 minutes

Ingredients:

1 large zucchini, cut into bit size pieces

3 cloves garlic, minced

2 1/2 tbsp chia seeds

1 tsp salt–we like pink Himalayan

1/2 tsp black pepper

1 tsp olive oil or coconut oil

 

Instructions:

Heat a dry skillet to medium high heat. Add the chia seeds and toast. Shake the skillet frequently and do not leave unattended. This happens fast! Remove the skillet from the heat just as they start to darken in color and give off a lovely nutty aroma.

Pour the seeds into a bowl and set aside.

Reduce heat to medium and add the olive oil to the same skillet. Let heat until just shimmering, not smoking. Add garlic, salt and pepper; and cook for 2 minutes, stirring consistently, so it doesn’t burn.

Add the zucchini and increase the temperature to medium high heat. Cook, stirring occasionally for 7 to 8 minutes, or until the zucchini begins to color.

Remove from heat and sprinkle with chia seeds. Serve immediately and enjoy!

Note: Try seeking out round zucchini, like those pictured above at your local farmer’s market. Black Beauty is the most common grocery store type variety, and will work well in this recipe. But “Round De Nice” is a good round variety that even grows on more compact plants. Try planting it on your patio next summer!
