Guilt free pumpkin pie! Enjoy this veggie packed smoothie for breakfast or snack. Add some collagen protein for a complete meal.

Prep Time: 5 minutes

Cook Time: none

Ingredients:

3/4 cup pumpkin puree

1/4 ripe avocado

2 large handfuls fresh spinach

1/2 teaspoon ground cinnamon

1/4 teaspoon ground ginger

1/8 teaspoon ground cloves

1/2 teaspoon vanilla

1 soft Medjool dates, pitted

Monk fruit sweetener, or stevia to taste

1 1/2 cups water or almond milk

2 handfuls of ice

 

Instructions:

Combine all of the ingredients in a high powered blender, such as a Vitamix. Adjust sweetness and spice to taste, if necessary, then serve immediately!

 

If you’d like to add some collagen protein, try the Bulletproof Collagen. It’s flavorless and won’t change the consistency of your drinks, although it will add some frothiness! Add it at the end and pulse gently till combined if you want to avoid that.
