You may have grown up eating your grandmother’s Banana Pudding like so many of us! But when you decide to go dairy (and gluten) free, there are things you choose to give up.  Don’t let Banana Pudding be one of them!  Here’s a healthier version of banana pudding without the extra sugar and dairy! And it’s delicious!

Ingredients

    • 3 large ripe bananas
    • 1/2 cup coconut sugar
    • 1/4 cup cornstarch
    • 1/2 teaspoon salt
    • 1/2 cup coconut milk
    • 1 1/2 almond milk
    • 1/2 teaspoon grated nutmeg
    • 1/8 teaspoon ground clove
    • 1 tablespoon lemon juice
    • 4 organic egg yolks
    • 1 teaspoon vanilla extract

Instructions
  1. Add bananas, almond milk, coconut milk, lemon juice, vanilla extract and egg yolks in a Vitamix blender and blend until homogeneous, about 3 minutes.
  2. In a medium saucepan, off heat, add coconut sugar, cornstarch, salt nutmeg, clove and stir to combine.
  3. Pour banana mixture into the saucepan with sugar mixture and whisk until well-combined.
  4. Place the saucepan on the stove over medium-low heat and gently warm while whisking,  until pudding begins to put off steam, about 5 minutes.
  5. Increase heat to medium and continue to stir until pudding begins to bubble and thicken, about 6 minutes longer.
  6. Remove pudding from heat. Pour pudding into a medium-sized bowl and allow to cool briefly.
  7. Serve topped with fresh banana slices, a bit of shaved dark chocolate, toasted coconut, or chopped macadamia nuts and pecans.
